INGREDIENTS
- 2 L full cream milk
- 3 tbsp white vinegar or lemon juice
- ½ tsp salt
METHOD
- Insert the butterfly whisk. Pour milk into the jug and heat to 90 °C / 12 min / speed 1 (lid cap open).
- Add salt and mix 10 sec / speed 1.
- Slowly add vinegar or lemon juice while mixing 15 sec / speed 1.
- Leave to rest in the jug for 10 min without stirring until curds form.
- Line a sieve with cheesecloth (or simply use the inner steaming basket if you don’t have one), pour in the mixture, and let drain 10–15 min, depending on how creamy or firm you like it.
Tip: Enjoy fresh or refrigerate in a sealed container for up to 3–4 days.
