INGREDIENTS

  • 3 Cosmic Crisp apples, cored and halved
  • 2 refrigerated pre-rolled pie crusts
  • ¼ cup brown sugar
  • 1½ tablespoons of plain flour
  • 2 teaspoons of ground cinnamon
  • Pinch of salt
  • 2 tablespoons of unsalted butter
  • ¼ cup apricot jam

METHOD

1 Preheat oven to 220°C.

2 Roll out dough on a lightly floured surface until 0.5cm thick, flatten any creases.

3 Place 7.5cm tart pans on the dough and cut 6 circles large enough to extend 0.5cm past rim of each pan. Press the circles into the pans and trim any excess dough. Pierce the bottom with a fork 4 or 5 times, then transfer to the freezer for 15–20 minutes.

4 While the dough chills, thinly slice each apple half, keeping the slices together so one half can go into each pan.

5 In a small bowl, whisk the sugar, flour, cinnamon, and salt together.

6 Remove the tart shells from the freezer and place a sliced half apple in each, sprinkle one ⅙ of the sugar mixture over each apple and dot with 1.5 teaspoons of butter.

7 Bake until the pastry shells are golden and apples are tender, 28–36 minutes. Gently heat the apricot jam and lightly brush onto the tops of the tarts while hot. Cool on a wire rack at least 10 minutes before serving.

8 Serve with cinnamon-flavoured whipped cream or ice cream.
