This easy-to-make caramel combines the rich sweetness of Medjool dates with creamy coconut milk and a touch of vanilla. Topped with a sprinkle of sea salt, it creates a perfect harmony of flavours. This indulgent dip is perfect for satisfying your sweet tooth while keeping it nutritious.
INGREDIENTS
- 1 cup pitted Medjool dates
- 1 cup full-fat coconut milk
- Pinch salt
- 1 tsp vanilla extract
- Sea salt, for topping
- Cosmic Crisp apples, sliced, for serving
METHOD
1 Soak the dates in warm water for about 20 minutes, then drain.
2 Combine the dates, coconut milk, pinch of salt, and vanilla extract in a high-speed blender. Blend until completely smooth, about 1–2 minutes, scraping down the sides as needed.
3 Pour into a serving bowl and top with sea salt to serve, if desired. Serve with apple slices and enjoy!
